  • Small mustard green is a leafy mustard green with thin green stalks. It has a strong peppery flavor and is more bitter than the big mustard green. Small mustard green can be stir-fry or pickled. Small mustard green is available year-round.

  • The stalk is firm and moist.
Storage
  • Small mustard green should be stored at 32°F (0°C) with a relative humidity of ninety-five to ninety-eight percent and light mist.
  • The typical shelf life is about two weeks. High humidity is important to avoid wilting.
  • Small mustard green is sensitive to ethylene, a naturally occurring gas that regulates ripening. Small mustard green should not be stored with high ethylene-producing products to extend shelf life and avoid yellowing. Small mustard green produces a low level of ethylene.
  • Small mustard green is not sensitive to chilling injury and should be stored as cold as possible without freezing. The freezing point for small mustard green is slightly below 32°F (0°C). Small mustard green is sensitive to freezing injury which results in water-soaked tissue and decay.
