  • Grey squash is a softshell summer squash with a cylindrical shape, pale green skin, and flecks of light green-grey speckling. Grey squash is generally around four inches in length. It has a buttery texture and a slightly sweet, nutty flavor. Grey squash is completely edible both raw and cooked. Grey squash can be cooked with olive oil and black pepper as a simple side dish. Grey squash is available year-round.

  • Grey squash is firm with a uniform color and glossy skin.
  • No signs of blemishes or decay.
  • The stem is green and moist.
Storage
  • Grey squash should be stored at 41°F - 50°F (5°C - 10°C) with a relative humidity of ninety-five percent and a light mist.
  • The typical shelf life is no more than two weeks. Long-term storage leads to dull rind, dried or discolored stem end.
  • Grey squash is sensitive to ethylene, a naturally occurring gas that regulates ripening. Grey squash should not be stored with high ethylene-producing products to extend shelf life. Grey squash produces a low level of ethylene. Ethylene production increases drastically under chilling temperature.
  • Grey squash is sensitive to chilling injury at storage below 41°F (5°C). Symptoms include surface pitting, increase rate of decay, and increase rate of water loss. Sometimes symptoms may not be apparent until return to a higher temperature.
