Handling Tip
Selection
  • Apple should feel firm to the touch with no bruises and decay.
  • Fresh apples should have a pleasant aroma.
  • Firm apples are best eaten fresh while softer apples are suitable for blending and cooking.
Storage
  • Apple should be stored at 32°F - 34°F (0°C - 1.1°C) with a relative humidity of ninety to ninety-five percent and no mist.
  • Typical shelf life is three to ten months under refrigeration depending on the variety.
  • Apple is sensitive to odor. Do not store apples with any strong aroma item. Apple is an odor producer.
  • Apple is sensitive to ethylene, a naturally occurring gas that signals fruits and vegetables to begin ripening. Do not store apples with high ethylene-producing items to extend shelf life and avoid over-ripening. Generally, apple produces a high level of ethylene. Fuji and granny smith varieties produce a low level of ethylene.
  • Apple is sensitive to chilling injury at storage below 29°F (-1.5°C). Symptoms include flesh browning, core browning, and soft flesh.
