  • Lychee aka "Litchi", "Lichi", "Li-Zhi", "荔枝"
  • Lychee is an oval to egg-shaped fruit with a thin grey rose-colored leathery skin. The skin is rough and bumpy to the touch. The translucent flesh is pearl white golf size with a hard, inedible black seed inside the sweet flesh. The fruit is usually one inch in diameter. Lychee tastes sweet with a floral note. Customers prefer lychee attached to the branches over the loose package. Lychee is available from early summer to early fall.

Selection
  • Lychee with bright red skin and no browning is preferred.
  • The skin shows no signs of crack or decay.
  • Lychee gives a little when pressed and with a floral fragrance.
Storage
  • Lychee should be stored at 36°F - 41°F (2°C - 5°C) with a relative humidity of ninety to ninety-five percent and no mist.
  • The typical shelf life is three to five weeks. At 68°F (20°C), lychee will only last three to five days. High humidity is important to delay moisture loss and color changes from red to brown.
  • Lychee is not sensitive to ethylene, a naturally occurring gas that regulates ripening. Lychee produces a low level of ethylene.
  • Lychee has a low sensitivity to chilling injury. However, dehydration during storage often leads to loss of skin color and browning and is often referred to as chilling injury.
