  • Anise/Fennel has a bulb-like pale green base, stalks like celery, and green feathery leaves. The entire plant is edible. Thinly sliced raw fennel bulb adds a sweet licorice flavor and crunchy texture to salads. Fennel stalks can take the place of celery in soups and stews. Fennel works best with fish and lamb. Fennel is available year-round.
Handling Tip
Selection
  • Anise/Fennel with a large tight white or pale green bulb that shows no signs of cracking and darkening.
  • The stalks and leaves are bright green and not wilting.
  • Avoid flowering heads indicating over maturity. 
Storage
  • Anise/Fennel should be stored at 32°F (0°C) with a relative humidity of ninety to ninety-five percent and with mist.
  • The typical shelf life is two weeks.
  • Anise/Fennel is sensitive to ethylene, a naturally occurring gas that regulates ripening. Do not store anise/fennel with high ethylene-producing products to extend shelf life and avoid leaf yellowing. Anise/Fennel produces a low level of ethylene. Ethylene production increases with an increase in temperature. 
  • Anise/Fennel is not sensitive to chilling injury.
