  • Baby arugula is arugula harvested at a younger stage of development for its more petit, delicate leaves and flavor. Baby arugula has an oak-like shape. It is a nutty, peppery-tasting salad green. Common application includes salads and pizza toppings. Baby arugula is available year-round.

  • Baby arugula is a uniform bright green color with no signs of yellowing, sliminess, or decay.
  • No foul odor.
Storage
  • Baby arugula should be stored at 32°F - 36°F (0°C - 2°C) with a relative humidity of ninety-five to a hundred percent and with light mist for loose packaging.
  • The typical shelf life is seven to ten days. High humidity is important to avoid wilting. High temperature promotes deterioration and leaf breakdown.
  • Baby arugula is highly sensitive to ethylene, a naturally occurring gas that regulates ripening. Baby arugula should not be stored with high ethylene-producing products to extend shelf life and avoid russet spotting and leaf yellowing. Baby arugula produces a very low level of ethylene.
  • Baby arugula is not sensitive to chilling injury but is susceptible to freezing injury. The freezing point for baby arugula is 31°F (-0.5°C) should be avoided. Freezing injury symptoms include yellowing, dried out, and translucent leaves.
