  • Yu Choy aka "Yu Choy Sum", "You-Cai", "油菜"
  • Yu choy has green, oval-shaped leaves attached to thin, long green stalks. It has a sweet taste similar to baby spinach, with subtle bitter and peppery notes. Yu choy is great for stir-fry, sauté, and blanching with oyster sauce.  Yu choy is available year-round.

Selection
  • Yu choy has a uniform green color with no signs of yellowing or wilting.
  • The stem is firm and moist. 
Storage
  • Yu choy should be stored at 34°F - 36°F (1°C - 2°C) with a relative humidity of ninety-five to a hundred percent and with mist.
  • The typical shelf life is one to two weeks.
  • Yu choy is sensitive to ethylene, a naturally occurring gas that regulates ripening. Yu choy should not be stored with high ethylene-producing products to extend shelf life and avoid leaf yellowing. Yu choy produces a low level of ethylene.
  • Yu choy is not sensitive to chilling injury and should be stored as cold as possible without freezing.
