  • Cardone looks similar to celery, but the stalk is not eaten raw. The stalk is pale green with a whitish hue and the center leaves are greyish-green. Some varieties have leaves armed with very finely pointed yellow or brown spines. Cardoon tastes very similar to artichoke with a slightly more bitter flavor. Cardoon can be cooked as a simple side dish or as part of a stew. Cardone is generally available from mid-fall to mid-spring.
